  • 4 ½ oz cold butter
  • 15 ¾ oz flour
  • 3 tsp baking powder
  • ½ tsp salt
  • 1 egg
  • 7 oz savoury cheese (mountain cheese, middle-aged Gouda, Cheddar or similar)
  • 1 cup milk
  • 2 tbsp sesame
Ingredients (bacon stuffing for 25 scones)
  • 10 ¾ oz cream cheese
  • 4 ½ oz bacon
  • some milk
Ingredients (Vegetarian stuffing for 25 scones)
  • 10 ¾ oz cream cheese
  • 1 ¾ oz herbs (fresh or frozen)
  • some milk

 

Preperation:

First, separate the egg.

Now mix butter, flour, baking powder, salt, egg white and your choice of cheese.

Add ½ + ¼ cup and 1tbsp of milk and knead it together into a smooth dough. This works best when done manually, for example when using a hand mixer. For optimal results, let your dough chill.

Powder your countertop with flour and roll the finished dough until it’s roughly 1 inch in height.

Cut the rolled dough into pieces of roughly 4cm in size. For beautifully rond scones use a cookie cutter or a thin glass with a diameter of 1.5 inch. When using a glass, cover the edge in flour so the dough comes off smoothly.

Put the cut-out pieces onto a baking tray with baking parchment. Mix one egg yolk with roughly 2tbsp of milk and coat your pieces with the mixture.

Finally, sprinkle some sesame across your scones and put them in the oven at 392°F (set your oven to circulating air) for 20-25 minutes until they take on a golden brown coloring.

Let your scones cool off after baking. Now you can enjoy your scones as they are or add some tasty stuffing. To add stuffing, cut your scones in half and add the respective stuffing using an icing bag or a knife.

If you like to mix hearty and sweet you also can enjoy your scones the traditional english way with butter and jelly.

 

Preparation for bacon stuffing:

Gently roast your bacon in a coated pan without adding oil.

Using a mixer, mix your bacon and its rendered fat with the cream cheese and milk until you’ve reached a texture to your liking.

 

Preparation for vegetarian stuffing:

When using fresh herbs, wash them and hash them into small bits.

Then mix the bits (or your still frozen herbs) with cream cheese and milk until you’ve reached a texture to your liking.
